Position: Chef de Partie

Vacancies: 1 candidate

 

SUYO is seeking a skilled and motivated Chef de Partie to join our culinary team. The ideal candidate will be responsible for managing the ceviche bar and hot appetizer station of the kitchen, maintaining high standards of food quality, and supporting the overall execution of service in alignment with SUYO’s culinary vision. Experience in Peruvian cuisine is considered a strong asset.

 

Job duties:

  • Prepare and cook complete meals and specialty dishes in accordance with established recipes, standards, and presentation guidelines, ensuring consistent quality, taste, and portion control.
  • Specialize in the preparation of dishes for the ceviche bar and hot appetizer station, with strong knowledge of Peruvian ingredients and culinary techniques.
  • Manage and take full responsibility for an assigned kitchen station during service, ensuring efficient workflow and timely food production.
  • Instruct and supervise cooks, commis chefs, and kitchen helpers in food preparation, cooking methods, garnishing, and presentation techniques.
  • Assist in menu planning and development, including daily specials and seasonal offerings, contributing new recipe ideas inspired by Peruvian cuisine.
  • Ensure all food was prepared and presented according to quality standards, food safety regulations, and workplace health and safety policies.
  • Maintain a clean, organized, and sanitary kitchen environment in compliance with local health regulations and internal procedures.
  • Monitor inventory levels for the assigned station, requisitioned food and kitchen supplies as required, and ensured proper stock rotation and storage practices.
  • Minimize food waste by following proper handling, storage, and preparation procedures.
  • Collaborate closely with the culinary team and front-of-house staff to ensure smooth service and high customer satisfaction.

 

Education and Experience requirements:

  • Completion of secondary school is required
  • Food Safe Level 1 Certificate
  • Completion of a culinary arts program or equivalent professional kitchen experience
  • Minimum 2 years of experience in a professional kitchen, experience in a similar role would be an asset
  • Experience with Peruvian cuisine or Latin American cuisine is a strong asset
  • Strong knowledge of cooking techniques, ingredients, and kitchen operations
