Tasks
- Estimate the quantity and cost of food items and supplies, and maintain records of food expenses, usage, sales, and inventory levels
- Train kitchen staff on new cooking techniques and the use of updated equipment, and oversee the work of specialist chefs, line chefs, cooks, and other kitchen staff
- Develop innovative recipes and menus, and guide cooks in the preparation, cooking, garnishing, and presentation of dishes
- Prepare and cook full-course meals and specialty breakfast and lunch dishes, and communicate with customers regarding special orders or dietary requests
- Order food items and kitchen supplies, and coordinate the purchase and maintenance of kitchen equipment
- Prepare customized dishes for customers with food allergies or dietary intolerances
- Provide leadership, guidance, and training to sous-chefs, specialist chefs, chefs, and cooks
